How to Cook Rawas
Pan-Seared Rawas Steaks
Season steaks with salt, pepper, turmeric and lime juice. Sear skin-side down on a very hot cast-iron pan for 4 minutes. Flip and cook 2 more minutes. Finish with butter and garlic.
Rawas Tikka
Marinate thick cubes in hung curd, kashmiri chilli, garam masala and mustard oil for 2 hours. Grill or bake at 220°C for 12 minutes. Serve with green chutney.
Rawas Coconut Curry
A Konkan-style coconut milk curry with kokum and green chillies. Add rawas pieces in the final 5 minutes so they stay moist and don't break apart.
